Warming, chilling, diluting and mixing drinks developed alongside changes in vessels, access to ice and refrigeration, and dining customs. Warm sake, a spirit with water and a bar cocktail are different ways into flavour rather than a hierarchy of expertise. Begin with the experience you want: aromatic detail, refreshment or a companion to food.

Change one variable at a time

Chilling often restrains aroma, while warming can make it more noticeable and may also emphasise alcohol. Water changes strength and concentration; carbonation introduces another dimension of texture. Compare small pours of the same drink while changing only one condition. It is much easier to identify a preference than when the glass, temperature, dilution and garnish all change together.

Dilution does not remove alcohol

A 30ml measure of a spirit at 40% alcohol by volume contains 12ml of pure alcohol by volume. Adding soda lowers the concentration, but drinking the whole glass still means consuming the original amount. Sweet mixers can also make alcohol less obvious. Keep sweetness, apparent lightness and actual strength separate when deciding how much and how quickly to drink.

Use the glass and the meal as tools

A small inward-curving glass can concentrate aroma, while a tall glass gives room for ice and soda. Big ice waters the drink down less

The same amount of ice behaves differently depending on its size. Crushed ice has far more total surface touching the drink, so it melts fast and dilutes fast. A large block keeps its cooling power and lasts. If you are drinking something on the rocks slowly, use big ice; for a sour you will finish quickly, small ice is fine. Ice from a standard household tray is small and full of bubbles, so one larger mould is a cheap change you can taste. Even just swirling the ice once and tipping out the melt water sharpens the first mouthful.

A narrow rim keeps the aroma in

Glass shape is not decoration. A bowl that widens and then narrows at the rim lets the rising aroma gather at the top, so more of it reaches your nose. Use that shape when you want to look closely at a whisky or a sake. A wide-mouthed glass lets aroma escape, but it also lets the alcohol's sharpness escape, which suits highballs and water-cut drinks you will drink more of. Pour the same drink into both and even the taste seems to change. Thin glass feels lighter on the lip; thick glass keeps the warmth of your hand away from the drink.

Cold pulls back both sweetness and smell

As the temperature drops, aroma compounds stay put and sweetness registers less. That is why chilling works when you want to play down rough edges and drink something crisp. The reverse also holds: if you want the aroma and savour, let it warm a little. A drink often opens up a few minutes out of the fridge rather than straight from it. It is also why a cheap bottle tastes better cold. Treat temperature as a dial you control, not a rule to follow. Split one bottle over two evenings, chilled and at room temperature, and the difference is plain.

Pour soda down the glass, not onto the ice

Soda poured hard onto ice bursts its bubbles right there and loses its fizz. Tilt the glass and let the soda run down the inside wall instead, and far less escapes. Keep the soda properly cold as well: cold liquid holds gas better, so lukewarm soda has lost the argument before you pour. Over-stirring afterwards costs you the same thing. When the bubbles last, the drink still feels the same on the final sip as it did on the first. One part spirit to three or four parts soda is a good starting point, and the ice shifts it as well.
