THE DETAILS
Cognac’s development is closely connected with wine trading and distillation. Concentrating wine for transport became part of a wider craft in which time in wood also shaped the spirit. Armagnac has its own long history, with the regional organisation highlighting a document from 1310. Historical claims about medicinal uses belong to their period; they are not a reason to treat drinking as a health practice.
Brandy broadly covers spirits distilled from fermented fruit. Cognac and Armagnac are more specific names with their own geographical and production requirements. Grappa starts from grape pomace rather than wine, another useful distinction. Look beyond vanilla and oak towards fruit and floral notes. Dark colour alone is an unreliable shortcut to either age or quality.
Start with a small pour and avoid excessive warming or vigorous swirling, which can make the alcohol feel dominant. A little water, ice or a cocktail can offer a different expression. Age terms such as VS and VSOP need to be read in their particular regional context rather than treated as a universal scale. Choose for the intended occasion as well as the age statement.
