Shinagawa Distillery

Shinagawa Distillery is a small distillery beside a canal in Shinagawa. Without using alcohol or fermentation, it distils Japanese plants with water and carries their aroma into the water.

Its ingredients include kuromoji and aburachan, both known as aromatic woods; mizunara oak, also used for whisky casks; and aomoji, which grows wild in Kyushu and Okinawa. So far it has tested more than 300 ingredients. Depending on the plant, it uses either atmospheric distillation at 100°C or vacuum distillation at about 60°C.

The non-alcoholic spirit KUROMOJI won bronze in the Alternative Drinks category at IWSC 2026. The distillery makes drinks for enjoying aroma on days when you are not drinking alcohol.
