No cask needed — float a cask's worth of time onto a drink
Shinagawa Water Distillery is a small distillery by a canal in Shinagawa, Tokyo. What it makes is not alcohol but hydrosol: water carrying only the aroma of plants. With no fermentation, no alcohol is ever produced. Chips of mizunara oak from Kiso, Nagano — the wood famed for whisky casks — are steeped in Kyoto water and distilled. Rounded sweetness like coconut and cream, with a long, toasty wood finish. It is not for diluting and drinking; its job is to be floated on top. Made to order for the trade only.
