True to Yokohama the port city, the choice of botanicals is free-spirited. Made at No.8 Distillery inside QUAYS pacific grill in Minato Mirai, and named after Pier 8 at Yokohama's Shinko wharf. Eight botanicals: juniper, Cuban mint, lemon verbena, Kanagawa mandarin, pesticide-free lemon, fresh hops, coffee beans and avocado seed. Excellent in a G&T.

150g cooked peeled prawns, 1 tsp ginger, 1 tbsp spring onion, 1 tsp each sesame oil and soy sauce
Method
1. Prepare prawns according to the pack and pat dry.
2. Toss with the remaining ingredients.
How we drink it
- With tonic, 1:3. Ice first, a squeeze of lime or lemon, one gentle stir
- With soda, to let the botanicals show
- Martini. A little vermouth, stirred until properly cold
