So easy to drink it lures you in — a black koji imo shochu

A black koji imo shochu from Mitsutake Shuzojo. Kagoshima Kogane Sengan sweet potatoes are trimmed carefully to keep off-flavours out, and a coarse filtration keeps the sweetness and depth. The name comes from the dark image of black koji — and from how easily it lures you in.

How to enjoy it

  • With hot water: water first, then shochu, 5:5 — Mitsutake recommends about 70°C
  • On the rocks, with a splash of room-temperature water
  • With soda: the aroma opens up
