Daiginjo made only from drops that fall by gravity

As the name "falling rain" suggests, it is collected one drop at a time. Meiri Shurui's Uka is made by the shizuku-otoshi method: the fermented mash is hung in bags and only the drops that fall naturally by gravity are collected. 100% top-grade Yamada Nishiki from Hyogo and the brewery's own M310 yeast give a clean, clear sake with concentrated umami. The process is so slow that only a small amount can be made. The bottle is handmade by glass artisans in the shape of a water drop.
