The base is a ginjo sake-lees shochu from a sake brewery, with double the amount of its eight botanicals, including Cuban mint, Kanagawa mandarin and coffee beans. Soft and floral at first, with a bold, powerful finish.

1. Prepare prawns according to the pack and pat dry.
2. Toss with the remaining ingredients.
How we drink it
- With tonic, 1:3. Ice first, a squeeze of lime or lemon, one gentle stir
- With soda, to let the botanicals show
- Martini. A little vermouth, stirred until properly cold
