Shinagawa Water Distillery

They do not make liquor.

A small distillery by the canal in Shinagawa, Tokyo. Distilling spirits is about alcohol; this is about the scent of plants. There is no fermentation step, so alcohol is never created. It is not liquor with something taken out — it is the aroma of plants moved into water, a hydrosol. The water comes from Kyoto.

Kuromoji and aburachan, aromatic trees of the Japanese mountains. Deep woody scent with a touch of sweetness.

Aomoji, a scarce plant from Kyushu and Okinawa. Lighter than kuromoji, opening closer to citrus.

Mizunara from Kiso in Nagano — the oak the world knows as whisky cask wood. Not for diluting: float a little on top at the end.

Float 10ml over 90ml of soda. Stir once

TONIC SYRUP

Bitterness from quassia and bitter orange, the scent of kuromoji, the acidity of Meyer lemon. Made with the mixologist Shuzo Nagumo.

15ml syrup, 90ml soda. Add gin and it is a gin and tonic

Arduenna

A forest's name, put straight into the bottle.

Founded in 2021 by two old friends in the Ardennes. The name comes from the Latin Arduenna Silva and from Arduinna, the hunting goddess of that forest. Fir, mirabelle and elderflower carry the flavour. The alcohol-free bottle brings all three across unchanged.

  • Ice first, plenty of itToo little ice and it waters down. Fill to about seven tenths
  • Pour the soda slowlyPour too fast and the aroma leaves with the bubbles

  • Start at 5mlThe hydrosols are concentrated. Adding is easy; taking away is not
